Recipe spotlight: Chicken roast
In honour of the women who inspire us, here’s a delish dish that speaks of comfort and care, a fragrant chicken roast, simmered with hearty vegetables in a rich, savoury sauce.
Ingredients:
- 4 bone-in chicken thighs and drumsticks
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried thyme (for garnish)
- Salt & black pepper to taste
- 2 cubes chicken stock
- 2 garlic cloves, minced
- 1 cup dry white wine (optional)
- 1 tbsp tomato paste
- 1 cup baby carrots
- 1 cup pearl onions (or halved regular onions)
- 1 cup mushrooms, halved
Method:
- Preheat your oven to 180°C.
- Heat olive oil in your Maxwell & Williams Cast Iron Round Casserole over medium heat.
- Season chicken with paprika, thyme, salt, and pepper. Sear until golden brown on both sides, then remove and set aside.
- Sauté onions, garlic, and mushrooms in the same pot for 2-3 minutes until fragrant.
- Stir in tomato paste, add white wine (if using), and deglaze the pot, scraping up all the flavourful bits.
- Add chicken stock and carrots, then nestle the chicken back into the pot.
- Cover and roast in the oven for 45 - 50 minutes until the chicken is tender and the sauce is rich.
- Garnish with fresh thyme and serve straight from the pot for a rustic, heartwarming presentation.
- Serve with fresh bread or a spoonful of rice! Enjoy.
