The Ultimate Rusk Recipe

Ingredients:

·         1kg self-raising flour

·         2 cups sugar

·         2 tsp baking powder

·         Pinch of salt

·         500g butter, melted

·         2 eggs, lightly beaten

·         500ml buttermilk

 

Method:

·         Preheat oven to 180°C.

·         In a large bowl, mix all dry ingredients.

·         Stir in melted butter until crumbly.

·         Add eggs and buttermilk. Mix to form a sticky dough.

·         Press into a greased baking tray and bake for 45–60 minutes until golden.

·         Remove from oven, cool slightly, then cut into rusk fingers.

·         Dry in the oven at 100°C for 4–6 hours until completely crisp.
